How Meal Prepping Has Transformed My Weekday Mornings

Let's be real: cooking during the week is not my favorite activity! I'm all about nourishing my body with wholesome, feel-good food, but when I’m in work mode, the last thing I want to do is spend hours in the kitchen—or tackle a pile of dishes!

That’s where meal prepping has been a total game-changer for me. Having a plan in place means that I don’t have to think twice about what to eat or worry about cooking when I’m busy or tired. It’s a simple way to make sure I’m getting delicious, healthy meals even when life gets busy!

My Sunday Meal Prep Routine

Usually, Sundays are my dedicated meal prep day. While John's busy whipping up a Sunday Roast and prepping some lunches or dinners for the week, I take on breakfast duty! I find that having my morning meals ready to go, especially on weeks when I'm out of my usual routine, makes a huge difference in sticking to healthy eating habits.

When life gets busy, having these breakfasts already prepared ensures I’m still eating food that makes me feel great. Plus, it saves me so much time during the week!

My Go-To Morning Favourites

Here are a few of my go-to morning favourites that are always on my meal prep rotation:


Greek Yoghurt Bowl:
A simple yet delicious combo of creamy Greek yoghurt topped with homemade granola, fresh fruit, and a drizzle of peanut butter. 🍓 It's filling, nutritious, and can be easily customized with whatever fruits you have on hand! I make a batch of the granola from this recipe and use it to make my Greek Yoghurt bowl too.

Fruit Compote Yoghurt Bowl
This is a slight twist on the classic yoghurt bowl, featuring Greek yoghurt, homemade granola, and a homemade fruit compote. Inspired by the one from Pret a Manger (if you’ve ever tried it, you know how good it is!), this version tastes just like it but is made with love at home. Here’s the link to the recipe.

(Pro tip: Both of these yoghurt bowls can be made into overnight oats to make them even easier to grab and go!)

Lemon & Blueberry Baked Oats
This one is new to my meal prep rotation! I found the recipe from @thefoodmedic, and it’s quickly becoming a favorite. It might take me a few attempts to perfect, but I love that it’s quick to make and super easy to eat on a busy morning. Here’s the link to the recipe.

Apple & Peanut Butter Porridge Bowl
Often I’ll make a batch of homemade apple sauce to use in my baked oats and also add to some porridge, peanut butter, and a drizzle of maple syrup. So simple, yet so delicious!

Why I Love Meal Prepping

Meal prepping has really helped me maintain a healthy eating routine, even when I’m working from home, traveling, or juggling social commitments. It's an easy way to ensure I always have nourishing options available, no matter what the week throws at me.
